Ingredients
- 500 g lamb
- 4 cloves garlic use black garlic if you can find it, if not you can make your own
- 1 small onion
- 500 g fresh chicken stock Asda sells fresh stock by grams but you can use the equivalent ml if making your own
- 1 tbspn balsamic vinegar
- 1 pack casserole veg (600g) you can buy these for £1 in Asda!
- 1 250ml red wine Rioja or a good Carbernet Shiraz
- 1 pinch Salt to taste
- 10 g fresh rosemary
- 10 g fresh thyme
- 1 tbspn olive oil
- 1 tbspn black garlic ketchup optional
- 10 g diced chorizo

Prep Time
- Heat oil in pan
- Add whole garlic cloves, (smashed), chorizo, onion and salt, stir for 2-3 minutes until onion is soft
- Add lamb and stir-fry for 5 minutes to brown and seal the meat...for a really special dish you can glaze the pan with mulled wine or port.
Slow Cooker
- Add casserole veg, stock, prepped lamb and red wine to slow cooker.
- Switch slow cooker to low to cook overnight or if you are out at work, (6-8 hours). Medium if you are home (5-6 hours), or high (4 hours). A longer cook time may need a little more liquid. For an 8 hour cook I'd reccomend adding another cup of stock (or wine!)
