Prep Time
  1. Heat oil in pan
  2. Add whole garlic cloves, (smashed), chorizo, onion and salt, stir for 2-3 minutes until onion is soft
  3. Add lamb and stir-fry for 5 minutes to brown and seal the meat...for a really special dish you can glaze the pan with mulled wine or port.
Slow Cooker
  1. Add casserole veg, stock, prepped lamb and red wine to slow cooker.
  2. Switch slow cooker to low to cook overnight or if you are out at work, (6-8 hours). Medium if you are home (5-6 hours), or high (4 hours). A longer cook time may need a little more liquid. For an 8 hour cook I'd reccomend adding another cup of stock (or wine!)

The leaner cuts of lamb reduce the fat content of the meal and the calories per serving are now over 100 less
